Fancy some queso chicken mac n’cheese? Watch to see how mine turned out 👀 Ingredients (makes 10 servings): 1kg chopped chicken breast 200g mild salsa 3 chopped green chillies 2 tbsp garlic puree 400g chopped tomatoes 1 chopped red pepper 1 chopped onion 525g penne 800g cottage cheese 100g cream cheese 150g cheddar 150ml skimmed milk Method: 1. In your slow cooker, add the chicken, half the salsa, green chillies, garlic puree, chopped tomatoes, red pepper and onion. Stir well and cook on high for 3 hours 2. Make the cheese sauce by blending the cottage cheese, low fat cream cheese, remainder of salsa, cheddar and skimmed milk 3. Add penne to a saucepan and cook until tender, then drain and add to the slow cooker with the cheese sauce. Stir well and bake in the oven for a further 10-20 mins.
