Afghan Biscuit RECIPE 🌼 Makes: 16 Prep time: 30mins Bake time: 16mins Biscuit: 200g unsalted butter, softened 115g caster sugar 225g plain flour 25g cocoa powder 60g cornflakes Chocolate ganache: ideally make this the day before so it can set 250g dark chocolate, chopped 200ml cream Walnut praline: 150g walnut pieces 100g caster sugar sea salt Bake the afghans: Preheat the oven to 160°C fan bake. Line two flat trays with baking paper. Put the butter and sugar into the bowl of your stand mixer and beat with the paddle attachment for one minute. Sift in flour and cocoa, mix in and then add the cornflakes. Beat until the cornflakes are entirely crushed up through the mixture. Roll into 40g balls and flatten. Transfer to prepared baking trays. Bake for 16 minutes, rotating after 8 minutes. Chocolate ganache: Melt the chocolate and cream together in the microwave for 1 minute, give it a stir and put it back into the microwave for another minute. Remove and whisk until smooth. Leave at room temp to firm up. To make the walnut praline: First off, have a piece of baking paper ready to pour the praline on to set. Put the sugar into a small saucepan over high heat. Carefully swirl the pot as the sugar melts so it caramelises evenly. Once the sugar is golden, remove from the heat, quickly add the walnuts and stir with a spatula to coat all the walnuts in the sugar. Pour onto the baking paper and spread out a little bit, so it’s not one big ball of praline. Sprinkle with sea salt and leave to cool. Top each biscuit with ganache and use a palette knife to push it to the top edges of the biscuit.
