This Independence, we partnered with Bajan Lifestyles to recreate a true Bajan classic — Cassava Pone — made easier with Carmeta’s Cassava Flour. No grating, no long prep. Just real Bajan flavour with less effort. Here’s the full recipe using one (1) pound of Carmeta’s Cassava Flour: Dry Ingredients • 1 lb Carmeta’s Cassava Flour 1/2 Cup of Grated Coconut • 1 cup brown sugar • 1 tbsp cinnamon • 1 tbsp nutmeg • 1 tsp salt • Dash of pepper Wet Ingredients • 1½ cups milk • ½ cup melted butter • 1 tbsp vanilla essence Method 1. Combine all dry ingredients in a bowl. 2. Add milk, melted butter, and vanilla essence. Mix until smooth and well combined. 3. Pour into a greased baking dish. 4. Bake at 300°F–325°F until golden around the edges and firm in the centre. 5. Allow to cool before slicing. Carmeta’s Cassava Flour keeps the tradition alive.
