This instant ramen upgrade went viral a while back before I started posting food content, so I thought I’d throw my iteration into the mix! Feel free to choose your own adventure and use your favourite instant ramen here! I’ve previously used Jin Ramen and Shin Ramyun as well, and they’ve worked out great. This was my first time trying the Pocha from @thehankitchen and it was super delicious if you can hunt it down! The trick here is very slowly incorporating the boiling water at first while stirring vigorously to temper the egg without scrambling. This, along with the mayo, results in a super creamy, rich broth. And if you’re not keen on spice, this is another great way to try out spicier ramens as the creaminess lessens the heat. Separating the spring onion into its light and dark ends for different purposes is applicable for many different recipes. The stem has a stronger raw onion taste, which lends itself to being cooked down. This adds flavour and bulk to the soup as it cooks with the noodles. Reserving the dark green end for garnish looks pretty, but also has a more mild flavour that is best fresh. I like to add kecap manis to my mix, which is a thick sweet Indonesian soy sauce. It’s optional if you can’t get a hold of it, but I love the umami richness it brings to the soup. The sesame oil can be added at the beginning or at the end.
