Ingredients (serves 2-3): • 300g chicken breast, diced • 1 green capsicum, diced • 1 medium onion, diced • 2 tbsp tomato puree • 2–3 tbsp cooking oil • 1 cup shredded cheese (cheddar/mozzarella mix) • 4 medium tortillas • Your choice of spices (I used salt, black pepper, paprika, cumin, chilli powder, oregano) Method: 1.
