EASY AND QUICK BEEF AND VEGGIE STIR FRY . . This is one that will stay on the dinner rotation every week. It’s flavor packed, veggie packed, and family friendly! . Ingredients 2-3 cups white rice 1 package frozen edamame 1 package shredded carrots Extra light olive oil Butter- 1-2 tbsp per each step 1 package diced red onion ( or 1 red onion) 2 each yellow, orange, and red peppers 2 large red onions 1 package or 1 large head broccoli Kikkoman’s low sodium soy sauce 1 package snap peas 2 cans water chestnuts Cashews Sweet chili sauce ( I use Franks brand always) Bachan’s Japanese bbq sauce Beef steak strips for stir fry . . In a pan, add 2 tbsp butter and some extra light olive oil and combine with frozen edamame, shredded carrots, 1 diced red onion and cook. Add to a big mixing bowl. In the same pan, combine your sliced up peppers, 1-2 more red onion in large cuts, and broccoli. Add 2 tbsp butter and low sodium soy sauce and cook those up. Add to your mixing bowl with other veggies. In a small pot, boil up your rice till cooked. Now in that same pan add your snap peas, water chestnuts, cashews, and low sodium soy sauce and cook till blended. In a large serving tray ( or whatever you want to use) add in your rice on one side, and the 2 veggies mixed on the other. And then take the last ones in the pan (the snap peas, water chestnuts, and cashews) and add those in the center between rice and other veggies! Now for final- add beef strips to the pan with 1 tbsp butter, sweet chili sauce, and Japanese bbq sauce, and let that marinate in that until cooked. Add your beef and all the juice onto the top of the dish, and serve!
