Kimchi fried rice, but make it portable 😂🍙 You guys loved this easy folding rice idea last time, so obviously I had to make another version! This one has all those kimchi fried rice vibes with savory Spam, sautéed kimchi, buchu, sesame oil + a fried egg folded up in gim. SO simple but so good😭 A lot of you also said the shape reminded you of Cobra Kai or a hanbok last time 😂 and fun fact, in Korea these are sometimes called “jeogori kimbap” because the folded shape looks like a jeogori, the top part of a traditional Korean hanbok. The contrasting cheese on the edges kinda looks like the collar 🤭 And the cheese isn’t just there for looks! It basically works like an edible little “glue” that helps the gim stick and keeps the whole pocket together. If cheese isn’t your thing, just skip it and use a little rice along the edges to help seal it instead. These are easy to hold, easy to pack, and perfect for a picnic, lunch, or quick grab-and-go snack. And honestly, Spam + kimchi + egg + gim… you already know that combo is gonna hit 😂 Save this one for your next easy meal! 🤍 Spam Kimchi Rice Pockets 🍙 Makes about 4 - Spam Kimchi Rice 1½ cups cooked rice ½ block Spam, diced small 2 tsp mirin 1 tsp soy sauce 1 tsp sugar ¾ cup chopped kimchi Neutral oil, for sautéing 1 tsp soy sauce 1 tsp sugar ¼ cup chopped Korean chives, regular chives, or green onion 1½ Tbsp sesame oil 1 Tbsp sesame seeds - For Assembly 2 sheets gim (nori), cut diagonally 4 fried eggs 2 slices cheddar or American cheese, cut diagonally 1. Pan-fry diced Spam until lightly browned. Add mirin, soy sauce, and sugar and cook until lightly glazed 2. Heat a little neutral oil in the same pan. Add kimchi, soy sauce, and sugar and sauté until softened 3. Combine warm rice, Spam, kimchi, Korean chives, sesame oil, and sesame seeds. Mix well 4. Place a triangle of gim shiny side down. Shape the Spam kimchi rice into a ball with your hands, place it over the fried egg, then shape into a triangle 5. Place a cheese triangle on each side corner of the gim 6. Fold the bottom corner up over the rice, then fold both side corners inward so the cheese helps seal everything into a triangle pocket
