BIG M’S CHOPPED CHEESE STUFFED ONION RINGS CHOPPED CHEESE FILLING * 16 oz ground beef * 1 green bell pepper, diced * 1 packet Goya Sazón * 1–2 tbsp Fire & Smoke Society Burger Royale Seasoning * 1 tsp garlic powder * 1 tsp onion powder * 1 tbsp Worcestershire sauce * 2 cups shredded pepper jack cheese (or cheese of choice) SEASONED FLOUR * 1 cup all-purpose flour * 1 tbsp Cajun seasoning * 1 tsp granulated onion * 1 tsp granulated garlic FOR ASSEMBLY * 2 onions, cut into 1-inch thick rings * 1 cup panko breadcrumbs * 2–3 eggs, beaten * Oil for frying BANG BANG SAUCE Sauce recipe is in my crab and shrimp egg roll video DIRECTIONS 1. Heat a pan over medium-high heat. Add ground beef and sear until browned. Add diced bell pepper and cook until the beef is fully browned. 2. Add Sazón, Burger Royale, garlic powder, onion powder and Worcestershire sauce. Mix well, taste and adjust seasoning if needed. 3. Remove from heat and let the beef mixture cool completely. Transfer to a bowl and mix in the shredded cheese. 4. Slice onions into 1-inch rings and separate them. Pair a larger ring with a smaller ring. Pack the beef and cheese mixture tightly between the rings, leaving the center open. Press the filling in firmly so the rings stay together. 5. Place the stuffed onion rings in the freezer for at least 1 hour. For the best results, freeze overnight and fry the next day. 6. When ready to fry, dredge each ring in seasoned flour, then beaten egg, then panko. Press the panko firmly into the onion ring to help prevent the filling from escaping while frying. 7. Heat oil and fry for 4–6 minutes, depending on size, until golden brown and crispy. Drain on a wire rack or paper towels. 8. Serve hot with Big M Bang Bang Sauce or my Chopped Cheese Sauce!
