Sweet Potato Pie Moonshine might sound wild, but this one came out ridiculously smooth. 🍠🥃 The sweet potato actually comes through, the spices don’t take over, and then that moonshine sneaks up on you at the end. This one is definitely getting made again. Sweet Potato Pie Moonshine Ingredients 2-3 large sweet potatoes, about 2 lb total 8 cups water 1½ cups packed dark brown sugar ½ cup granulated sugar 4 cinnamon sticks 1 tsp ground cinnamon 1 tsp ground nutmeg ½ tsp ground ginger ⅛ tsp ground cloves ¼ tsp kosher salt 1 Tbsp pure vanilla extract 1½ cups 190 proof grain alcohol, such as Everclear 1½ cups 80 proof vodka Directions Roast the sweet potatoes at 400°F for 50 to 70 minutes, until very soft. Let them cool enough to handle, peel off the skins, then add the potatoes to a large pot with 8 cups water and mash them down thoroughly. Add the dark brown sugar, granulated sugar, cinnamon sticks, cinnamon, nutmeg, ginger, cloves and salt. Bring to a gentle boil, reduce the heat, cover and simmer for about 30 minutes, stirring occasionally. Remove the cinnamon sticks. Pour the mixture through a fine mesh strainer into a large bowl, pressing the sweet potatoes down to extract as much liquid as possible. Strain again through several layers of cheesecloth. You should end up with about 5 cups of strained sweet potato liquid. Stir in 1 Tbsp vanilla extract, then let the mixture cool completely and refrigerate until cold. Once completely cold and away from any stove, flame or ignition source, stir in 1½ cups 190 proof grain alcohol and 1½ cups vodka. Never add high proof alcohol while the mixture is hot. Pour into clean Mason jars, seal and keep refrigerated. Let it sit for at least 3 days, but 5 to 7 days is even better for the flavors to come together.
