WEEK 8 | MEAL 4: BABE ON A BUDGET TAKES THE WEEKLY SHOP 🛒🛒🩷🩷 MEAL 4: Smoky Sweet Potato, Halloumi & Black Bean Traybake w/ Creamy Corn 🍴 3 portions* ⏰ 35 minutes Store cupboard essentials: Oil, Smoked Paprika, BBQ Seasoning, Garlic, Cumin, Cinnamon, Dried Parsley, Mayo Optional: Tajin (use Chilli Flakes if not!) Ingredients FOR THE TRAYBAKE: - 2 Large Sweet Potatoes - 1tbsp Oil - 1tsp Smoked Paprika - 1tsp BBQ Seasoning - 1tsp Garlic - 0.5tsp Cumin - 0.5tsp Cinnamon - 0.5tsp Dried Parsley - Salt & Pepper - 1 Bell Pepper - 225g Halloumi - 1 Can of Black Beans (drained) FOR THE CREAMY CORN: - 150g Sweetcorn (drained) - 1tbsp Olive Oil - 1tsp Smoked Paprika - Salt & Pepper - 1tbsp Mayo - 1tsp Yoghurt - Juice of 1/2 Lime - 1tsp Tajin / Chilli Flakes TO SERVE: - 2tbsp Yoghurt - 1 Avocado - Handful of Feta - 2tbsp Pickled Red Onions - Fresh Coriander - Juice of 1/2 Lime To make... 🥑 Preheat the oven to 200 degrees. 🥑 Dice up sweet potato & pop onto a baking tray. 🥑 Drizzle with olive oil & season with smoked paprika, BBQ seasoning, garlic, cumin, cinnamon, dried parsley & salt and pepper. 🥑 Pop into the oven for 15 minutes. 🥑 Dice up the bell pepper and the halloumi into chunks. 🥑 Remove from the sweet potato from the oven and add the pepper and halloumi - give everything a good mix and pop back into the oven for 20 minutes. 🥑 Whilst that cooks, add drained sweetcorn into a frying pan with some oil. Season with smoked paprika, salt and pepper and cook until it begins to char. When at the desired colour, remove from the heat and mix through mayo, yoghurt & lime juice before topping with tajin / chilli flakes. 🥑 Remove the tray bake from the oven, ensuring that the sweet potato is cooked. 🥑 Top with yoghurt, creamy corn, avocado, fresh corridor, pickled red onion, feta & a little more lime juice.
