Inspired by @⍣ Cristina ✵ ゚⋆ tomato bagels! All natural blueberry bagels Main Blue Dough * 275g bread/strong flour * butterfly pea powder and/or spirulina powder mixed into the flour * 156g cold water * 9g sugar * 2.75g yeast * 3.5g salt * 9g butter (room temperature) Darker Accent Dough * 25g bread/strong flour * extra butterfly pea powder powder mixed into the flour for a darker color * 14g cold water * 1g sugar * 0.25g yeast * 0.3g salt * 1g butter (room temperature) Water Bath * 1000g water * 50g sugar *if using food coloring use these measurements and mix in coloring once the dough is formed and add butter* - 300g bread/strong flour - 170g cold water - 10g sugar - 3g yeast - 4g sugar - 10g butter (room temperature) - food colorant (blue) Instructions tr.r 1. In separate bowls, mix all ingredients for each dough except the butter. Add the natural coloring powders directly into the flour before mixing. 2. Add the butter and knead each dough for at least 10 minutes until smooth. 3. Let the darker dough rest covered while working on the main dough. 4. Divide the main blue dough into 6 equal pieces and shape into balls. Cover and rest for 30 minutes. 5. Shape each bagel by rolling the dough into a rectangle, rolling it up tightly, then sealing the ends together into a ring. 6. Roll out the darker dough and cut decorative shapes/details. Use a tiny bit of water to attach them to the bagels. 7. Cover and let rest another 30 minutes. 8. Bring 1000g water + 50g sugar to a low simmer. Boil each bagel for 20 seconds per side. 9. Bake in a preheated oven at 375F for 18 minutes total. After 5 minutes, loosely cover with foil and continue baking for 10-13 more minutes. #Bagels #blueberrybagels #foodart #cozyfood #cozyrecipes
