Alright fine… I went over by 10 minutes. 😂 But this 50-minute meal was worth every single minute. Crispy fish, flavorful mejadra, and a fresh chopped salad… a complete meal your family will love🥰 Here’s the link to everything I used in this video✨ https://amzn.to/4b2mGdk Ingredients Fish • 2 lbs white fish (I used red snapper) • Juice of 2 lemons • 1 tsp salt • ½ tsp black pepper • Drizzle of olive oil Breading • 2 cups panko • ½ cup sesame seeds • ½ cup avocado or neutral oil Mejadra • 2 cups basmati rice • 2 cups green lentils • ⅓ cup oil • 3 onions, chopped • 1 tbsp salt • 5 cups water Salad Persian cucumbers, tomatoes, onion, parsley, lemon juice, olive oil, salt & pepper. Instructions Marinate the fish with the lemon juice, olive oil, salt, and pepper. Rinse the rice and lentils. Add to a pot with the salt and water. Bring to a boil, cover, reduce to a simmer, and cook 20–22 minutes (25–30 minutes for softer rice). Meanwhile, caramelize the onions in the oil until deeply golden, then stir them (and the oil) into the cooked rice. Mix the panko and sesame seeds. Press the fish into the crumbs (no eggs needed) and fry about 3 minutes per side until golden. Let rest on a wire rack. Toss together the salad and serve. ✨ Frying Tip: Line your pan with parchment paper before adding the oil. It helps keep the oil cleaner longer and makes cleanup much easier.
