Who needs a bun when the cheese does all the work? 🤯 These crispy chicken taco sandwiches seriously taste like a guilty pleasure, but they’re packed with protein! Huge shoutout to @Tasty Shreds for the inspiration! 🙌 Crispy High-Protein Chicken Taco Sandwiches Makes: 2 servings Ingredients: * 4 Just Bare Lightly Breaded Chicken Breast Strips * 4 slices turkey bacon, cooked and chopped * 90g Trader Joe’s Lite Shredded Mozzarella * 30g Sargento Reduced Fat Mozzarella * Very light drizzle of oil (about 1 tsp total or less) * Seasoning of choice (I used Fire & Smoke Society Honey Garlic Seasoning) Optional Toppings: * Shredded lettuce * Tomato slices * Pickled jalapeños * Protein ranch (plain nonfat Greek yogurt mixed with ranch seasoning) * Fresh chives Instructions 1. Cook the chicken strips according to the package directions, then chop into bite-sized pieces. 2. Line a baking sheet with parchment paper and lightly drizzle with oil. 3. Divide the chicken into two taco shell-shaped rounds, about the size of a taco shell. 4. Top each with 2 slices of chopped turkey bacon. 5. Mix both cheeses together and divide evenly over the chicken. 6. Season to your liking. (I used Fire & Smoke Society Honey Garlic Seasoning.) 7. Bake at 375°F for about 10 minutes, or until the cheese is melted and just starting to turn golden. Be careful not to overbake or the cheese will become too crisp to fold. 8. Let cool for 2–3 minutes until the cheese firms up slightly, then carefully peel each shell away from the parchment. It should still be flexible enough to fold. 9. Carefully fold into taco shapes, then fill with shredded lettuce, tomato, pickled jalapeños, protein ranch, and a generous sprinkle of fresh chives.
