Carrot Tarte Tatin / Upside Down Tart Serves 4 Ingredients: 6-8 carrots 1/2 cup grated parmesan 2 tbsp balsamic vinegar 2 tbsp honey 1 tbsp butter Herbes de Provence (or dried herbs of choice) 1 puff pastry To serve: Green salad or bean salad 1/ Preheat oven to 200°C / 400°F. Slice the carrots in half (or thirds if large), then slice lengthwise. In a pan, heat the butter with a drizzle of olive oil. Add the carrots, season with salt, pepper and herbs and cook for about 10 minutes with a lid on to help soften and steam them slightly. 2/ Line a pie dish or baking dish with parchment paper. Sprinkle the parmesan onto the bottom of the dish, then drizzle over the balsamic vinegar and honey. Arrange the cooked carrots on top. It doesn’t need to be perfect, just enough to mostly cover the dish. Lay the puff pastry over the carrots and tuck in the edges slightly. Poke a few holes with a fork to let the steam escape. 3/ Bake for about 30 minutes until the pastry is golden and crisp.
