i don’t think mine will ever come CLOSE to hers but regardless, these will never get old <3🫐 (for the dough) you’ll need: - 50ml sunflower oil (or any neutral oil) - 100-200ml hot water (you may need more or less, just add it gradually) - 1/2 cup plain flour - pinch of sea salt (for the filling): - 1 cup wild blueberries / regular blueberries - 1tbsp cornflour - 2tbsp sugar (to serve): - thick cream / crème fraiche / yogurt - sugar method: 1. begin by mixing the blueberries, cornflour and sugar in a medium sized bowl and leave to one side. 2. meanwhile, place the flour, oil, salt and most of the water in a seperate bowl and begin mixing together. add water gradually until you form a soft dough. 3. knead for a few minutes on a clean work surface until smooth and elastic. 4. roll out thinly until it’s about 1mm thick. 5. using a round 5cm cutter (i just used a glass rim!), cut out circles from the dough. 6. place about 1tsp of the blueberry mixture into the centre of the circle and lift the bottom half of the circle and fold over the blueberries to pinch the other half of the dough. you should be left with a semi circular dumpling. 7. pinch the edges so that they are sealed and finish with a fork to ensure that no filling can escape. 8. place the dumplings onto a floured tea towel. 9. repeat this process with the rest of the dough. 10. in a large saucepan, heat some water until boiling. 11. gently lower the dumplings (about 4 at a time depending on how big your pan is!). 12. allow the dumplings to simmer in the water for about 3-4 minutes or until they float to the top (this is how you know they are cooked!). 13. remove from the water using a slotted spoon and repeat with the rest of the dumplings. 14. serve whilst warm with a generous dollop of cream and a sprinkle of sugar… enjoy xxx (these are also known as varenyky i’ve been told!!!) #pierogi #dumplings #polish #easyrecipes
